Sunday Roasts
Lemon olive oil and Italian seasoning roasted whole chicken, crispy skin and juicy every time
This is the Sunday roast that changed everything. A whole chicken stuffed with lemon, onion and a bundle of fresh rosemary and thyme, then rubbed all over with lemon infused olive oil and a generous coating of Italian seasoning — simple, fragrant and deeply flavourful. Cooked breast side down in the air fryer first so the juices baste the breast meat, then flipped for a golden, crackling finish. No basting, no fuss, no oven to heat up. Just the most delicious, juicy roast chicken you'll make all year. Rest it for 10 minutes before carving and it will be perfect every single time.
Pat the chicken dry with paper towel and place on a board.
Place the lemon, onion, rosemary and thyme in the chicken cavity and place into air fryer basket.
Rub the chicken all over with the lemon infused olive oil, sprinkle one side with a tablespoon of Italian seasoning, turn the chicken over and sprinkle over another tablespoon. Season with salt and pepper.

Place the chicken breast side down in the air fryer basket. Cook at 180°C for 30 minutes.
Carefully flip the chicken breast side up and cook for a further 20–30 minutes, or until the skin is golden and crispy and the internal temperature reaches 74°C at the thickest part of the thigh.
Remove from the air fryer and rest for 10 minutes before carving. This step is important — it keeps the chicken juicy.
Kitchen Notes
Starting breast side down is the secret — the juices run down through the breast meat as it cooks, keeping it incredibly moist. If your air fryer is smaller, a 1.5kg chicken works just as well; reduce the cooking time by about 10 minutes. Always check the internal temperature reaches 74°C to ensure it's cooked through.
