Spicy Carrot Soup

Smoky, spiced and deeply satisfying — these beans are anything but ordinary.
These are not so humble baked beans from a tin. Smoky paprika, chilli flakes, garlic and a generous knob of butter transform two simple cans of beans into something deeply flavourful and completely addictive. Simmered down with diced tomatoes and tomato paste until thick and saucy, they're the kind of thing you'll want on toast for breakfast, spooned alongside eggs, or served straight from the cast iron pan at the table.
Melt the butter in a heavy-based pan or cast iron skillet over medium heat. Add the onion and cook, stirring, for 5–6 minutes until softened and translucent.
Add the garlic, smoked paprika and chilli flakes. Stir and cook for 1 minute until fragrant.
Add the diced tomatoes and tomato paste. Stir to combine and simmer for 3–4 minutes.
Add both cans of baked beans and stir everything together. Simmer over medium-low heat for 5-6 minutes, stirring occasionally, until the sauce has thickened and the flavours have come together.
Season generously with salt and pepper. Taste and adjust chilli to your liking. Serve hot.
Kitchen Notes
A cast iron skillet gives these beans a beautiful caramelised edge around the sides. If you like more heat, add an extra pinch of chilli flakes at the end. These reheat brilliantly the next day — the flavour only gets better.

Thick sourdough toast, poached or fried eggs, grilled halloumi or as a side to a big weekend breakfast spread.
