Spicy Carrot Soup

Bold, smoky and deeply flavoured — a one-pan dinner worth coming back to.
This is the kind of dinner that fills the kitchen with the most incredible smell. Leftover or poached chicken gets shredded and folded through a rich, smoky sauce of chorizo, capsicum, garlic and tomato — all spiked with paprika, chilli and dried oregano. It comes together in one pan and tastes like it took far longer than it did. Serve it over rice, tucked into wraps, or simply spooned straight from the pan.
Heat a large heavy-based pan over medium-high heat. Add the chorizo and cook, stirring, for 3–4 minutes until it starts to crisp and release its oils.
Add the butter, then the onion and capsicum. Cook for 5–6 minutes until softened. Add the garlic and chilli (if using) and cook for 1 minute until fragrant.
Add the smoked paprika and dried oregano. Stir to coat everything in the spices.
Add the mixed tomatoes, passata, chicken stock and sugar. Stir to combine and bring to a simmer. Cook for 10–12 minutes until the sauce has thickened.
Add the shredded chicken and stir through the sauce. Simmer for a further 5 minutes until the chicken is heated through and well coated. Season generously with salt and pepper.
Serve hot, straight from the pan.
Kitchen Notes
This is a brilliant way to use up leftover roast chicken. This recipe freezes well — make a double batch and freeze half.

Steamed rice, crusty GF bread, or tucked into wraps with sour cream and fresh coriander.
