This is the banana bread recipe I come back to every single time. It's made with just five pantry staples, comes together in one bowl, and bakes into a golden, tender loaf that's perfect warm with butter. The riper the bananas, the better — so this is the ideal recipe for those spotty ones sitting on the bench.
Preheat oven to 160°C. Grease and line loaf tin with baking paper.
Combine all ingredients in a large bowl and mix until just combined — don't overmix.
Pour into the prepared loaf tin and bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
Cool in the tin for a couple of minutes before turning out onto a wire rack.
Kitchen Notes
The riper the bananas the better — those very spotty, almost-too-far ones give the best flavour and natural sweetness. This loaf freezes beautifully; slice before freezing so you can grab a piece at a time. Reheat in the toaster or microwave.
What I'd serve with this
Warm from the oven with a generous spread of butter and a cup of tea or coffee. A drizzle of honey on top is also lovely.
