Chocolate Fudge Marshmallow Popcorn

This is not your average popcorn. A rich fudge sauce made from evaporated milk, butter, sugar, and marshmallow fluff gets poured over freshly popped corn along with melted milk chocolate and whole marshmallows. The result is gloriously sticky, sweet, and completely irresistible. It's a crowd-pleaser at every party, movie night, or bake sale — and it disappears in minutes.

Ingredients

  • 1 cup popcorn kernels, popped
  • 3 cups mini marshmallows
  • Fudge Sauce

  • 340ml evaporated milk
  • 110g butter
  • 3 cups sugar
  • 215g marshmallow fluff
  • 300g milk chocolate, roughly chopped

Method

    Pop the popcorn kernels and spread out in a very large bowl or across two large baking trays lined with baking paper. Remove any unpopped kernels.

    Scatter the mini marshmallows through the popcorn and set aside.

    In a large heavy-based saucepan, combine the evaporated milk, butter, and sugar over medium heat. Stir constantly until the butter melts and the sugar dissolves.

    Bring to a boil, then continue to cook, stirring frequently, for 5 minutes until the mixture thickens slightly.

    Remove from heat and quickly stir in the marshmallow fluff and chopped milk chocolate until completely melted and smooth.

    Working quickly, pour the hot fudge sauce over the popcorn and marshmallow mixture. Toss well to coat everything evenly.

    Spread out on the lined trays and allow to cool and set for at least 30 minutes before breaking into clusters and serving.

Kitchen Notes

Work fast once the fudge sauce is ready — it sets quickly. Use a large spoon or spatula to toss and coat the popcorn evenly before it firms up. Store in an airtight container at room temperature for up to 3 days (if it lasts that long).
