These blackened chicken burgers are everything a great burger should be — smoky, spiced, and deeply satisfying. A generous coating of spices and a brush of melted butter gives the chicken schnitzel that gorgeous dark crust, paired with a creamy, tangy burger sauce and all the classic toppings. Perfect for feeding a crowd.

Burger Sauce
Make the burger sauce: Combine the mayo, hot sauce, BBQ sauce, tomato relish, and chilli flakes in a small bowl. Mix well and refrigerate until needed.
Mix together the smoked paprika, garlic powder, onion powder, dried thyme, oregano, chilli powder, black pepper, white pepper, salt, and brown sugar in a small bowl to make the spice rub.
Brush the chicken schnitzels all over with the melted butter, then coat generously on both sides with the spice rub, pressing it in well.
Heat a large heavy-based pan or BBQ grill over high heat with a drizzle of oil. Cook the chicken for 3–4 minutes each side until blackened on the outside and cooked through. Work in batches if needed.
Lightly toast the burger buns, placing a slice of cheese on the bun base as it toasts so the cheese melts. To assemble: start with the cheesy bun base, then layer with lettuce, tomato (seasoned with salt and pepper), and pickles. Place the blackened chicken on top, spoon the burger sauce generously over the chicken, then finish with the bun lid. Serve immediately.
Kitchen Notes
The butter is key to getting that gorgeous dark crust — don't skip it! For extra flavour, make the spice rub the night before and let the buttered chicken marinate in the fridge overnight.
What I'd serve with this
With a simple coleslaw and a pile of hot chips or sweet potato fries. Or keep it classic with lettuce, tomato, pickles, and extra burger sauce.
